This is another one of my favourites. So versatile. You can use it raw as a mock mince or roll them up into balls for not meat balls – which can then be drowned in Ospallas Marinara sauce. You can eat them raw or cooked.
Ingredients
1 Cup walnuts (soaked)
1 tbs cold pressed olive oil
1 tspoon Tamari
Pinch of salt
2 tbs minced onion
1 tbs fresh parsley finely chopped
Method
Pop the walnuts, lemon juice, olive oil, tamari and salt in a food processor fitted the the S blade and schooch. Pop into the bowl and add onion and parsley and stir. This is your base. From here turn the mixture into whatever you like – mince, not-meat balls, burgers. I sometimes pop them in the dehydrator to warm them up and form a crispy shell.
